The current exhibit celebrating the 75th anniversary of the Golden Gate Bridge is a fascinating display of Bay Area history from 100 years before the bridge was built, through its completion.

Recipe for the season

Pasta Carbonara with Pancetta and Spring Vegetables

A new twist on an old favorite! Nothing says Spring like the vegetables that are appearing at the Farmers Market, your local supermarket or better yet, from your own garden. Here is a wonderful pasta recipe, featuring asparagus, fava beans, or fresh peas – which ever you have on hand.

1 pound spaghetti or linguine

3 oz pancetta, diced

1 T minced garlic

1 egg

3 egg yolks

1 C half and half

2/3 C freshly grated Parmesan

½ pound of asparagus, fava beans or English Peas

½ t salt

fresh ground pepper to taste

Bring a large pot of salted water to a boil. Add pasta and cook to al dente. While pasta is cooking, sauté pancetta in a large pan until well browned. Add the garlic and stir for one minute. Set aside. Combine egg, egg yolks, half and half, and Parmesan, and set aside. Blanche cleaned vegetables (if asparagus, cut in 2 “ lengths). When pasta is done, drain it, and immediately add to the pan with the pancetta and garlic. While pasta is piping hot, stir in the egg mixture. Use tongs or a pair of forks and mix thoroughly. The hot pasta cooks the egg just enough, and the sauce thickens to coat the spaghetti. Fold in blanched vegetables. Add salt and pepper to taste. Top with additional Parmesan cheese and enjoy! Makes 8 servings.
