Happy Anniversary to us!
May 8th was not only Mother’s Day, it was also our First Anniversary in our new office and kitchen! Although we have been around for 46 years, the new space has given us more production capabilities and more ability to maintain our Green Business status.
If you have not been here yet, feel free to stop by, we will be happy to give you a tour! Our staff continues to appreciate the large windows and more open work environment. Clients have commented that our new site is warm, inviting, and professional. We are very happy in our new spot and look forward to many years to come.

We have always been conscious of our role in the environment and society. Then in 2007, as we became even more aware of the harmful effects of global warming, we decided it was time to make as much of a difference as we could. We investigated what it would take to become certified as a Green Business in Marin. We learned it was possible for our company to successfully make the positive changes to earn the certification, and so we did. Some of those efforts included transitioning to using the most environmentally friendly disposables available, using 100% recycled white paper in the office and closely monitoring our heating and cooling. The outside resources were not as plentiful to make this shift as they are today. But we were determined. At that time we became the first caterer to be certified, and we were proud to lead the way.
Our efforts have continued to develop as technology becomes more available. In 2014, we were part of the focus group to participate in Marin Sanitary Service’s “Food 2 Energy” program. We continue to be active participants and the program is now available throughout San Rafael.
After our move to our new kitchen and offices, we needed to re-certify. It was even easier this time with experience and more community support available. Marin Sanitary Service and the City of San Rafael provide businesses with many more tools to use to accomplish this goal. On our own initiative, we purchased all new Energy Star equipment, we have LED lights throughout, and we installed a sanitation system using very low toxic cleaning solutions.
As of March 2016, our re-certification is official! We continue to be a Green Business and have learned that no other catering company in Marin has jumped on the bandwagon. After 9 years, we can still claim to be the FIRST and ONLY Green Caterer in the county! We are very proud!

In the article it mentions our staff loyalty. However, to us this is one of the the very special aspects of Delicious! Catering and deserves more detail. A respectable well-run company attracts good hard-working people. Co-owner, Teresa Hammond, is a great example of this fidelity and has been with Delicious for 35 years. Other members of the longevity team are Eileen Lang, controller/office manager, for 31 years; Lara Gremmels, event specialist, for 16 years, and Leigh Rafkin, event specialist, for 9 years. We also have many kitchen and event staff that have been with us for over 10 years. Longevity like this is hard to find in the food industry! We appreciate all the heart and hard work the entire team continues to put into make Delicious! Catering a successful San Rafael business.
Salmon with Strawberry Avocado Salsa
One of the most flavorful, fresh, local foods in the month of May is the iconic strawberry. Mix up a quick salsa of strawberries, avocado and cilantro, spoon it across a perfectly grilled piece of wild salmon, all set atop a bed of baby greens and you have just created a perfect dinner for a warm spring evening.
Yield: 4 servings
Juice and zest of 1 lime
1 clove garlic, minced
Handful cilantro, chopped
2 T olive oil
4 6oz filets of salmon
Salt and Pepper
1 pint strawberries, rinsed, hulled and diced
1 avocado, diced
¼ C red onion, diced
1 jalapeno, seeded and minced
Handful cilantro, chopped
Juice of 1/2 lime
2 T olive oil
Salt and Pepper to taste
Stir lime juice, zest, garlic and cilantro together. Pour over salmon and marinate for 20 minutes. Dry the salmon with a paper towel and season with salt and pepper. In a large non-stick skillet heated over medium-high heat, add oil. Add salmon, flesh side down and sear until golden brown, about 4 minutes. Turn fish over and sear until fish begins to flake, about 4 minutes. Set fish aside to rest.
Combine the salsa ingredients and season with salt and pepper.
Serve salmon and salsa over baby greens for a main dish salad or pair with your favorite grain and vegetable side dishes.
