It’s Passover time!
Passover and Easter are based on the lunar calendar, which is why the dates fluctuate over a four week period between the end of March to the end of April. This year both holidays are celebrated in April, with Passover beginning the evening of April 10th. To celebrate, we offer traditional favorites as well as more modern choices that follow the Passover dietary rules. You can order food to pick up, or let us plan the entire dinner and provide serving staff. We have a sample menu on our webiste, and we can email you a complete list of our offerings. Be sure to order before Friday, March 31st!
Green Business of the Year, maybe? Hopefully!
Each year the San Rafael Chamber is proud to recognize Chamber member businesses that have taken extraordinary efforts to adopt sustainability practices into their business operations, mission and values. We are honored to be included in this year’s nominee pool. Our green approach is one of the cornerstones in our daily business practices. And we are still the ONLY Green catering company in Marin County! The winners will be announced at the annual State of the City dinner on March 16th. We are crossing our fingers and toes!
Featured Recipe - Roasted Asparagus
Roasting asparagus is a fantastic way to celebrate one of springtime’s most iconic vegetables. Roasting neutralizes the natural bitterness of asparagus, making it sweet and the perfect accompaniment to grilled fish or lamb.
Yield: 2-3 portions per lb of asparagus (if you love asparagus like we do, then only 1-2 portions!)
1 bunch pencil size asparagus, trimmed
2 tablespoons olive oil
1 teaspoon kosher salt
½ teaspoon freshly ground black pepper
1 clove garlic, minced
1 ½ tablespoons grated Parmesan cheese
1 tablespoon lemon juice
Preheat oven to 425 degrees. Toss the asparagus spears in olive oil, salt and pepper. Optional garlic and/or Parmesan cheese can be added at this time. Arrange spears on a baking sheet in a single layer. Roast in pre-heated oven until just tender, 12 to 15 minutes depending on thickness of spears. Optional lemon juice can be sprinkled on before serving.
